Mealworms--The <em>Other,</em> Other White Meat

The holiday's coming, want something nutritious, yet ecologically friendly? Scientific American's got your solution--mealworms!

Consumed as larval forms, before they become unpleasantly crunchy, mealworms, the story is, are tasty (ecologically speaking) and modern alternatives to your parents' uncool, old fashioned, grocery-store meats.

Raising cows, pigs and chickens is evil, apparently, and an ecological nightmare. More than two thirds of all farm land is used for housing livestock and growing feed. Fifteen percent of all human-generated greenhouse gas is from livestock production, you know. Sure, becoming vegetarian is one way to reduce yucky, "harmful emissions." But eating bugs would keep animal protein on the menu without melting any more valuable polar bear habitat.
